Lemon cookies

Hi guys! So I’m back! I was at the beach for a while which was great! But I am back now and I have been craving cookies. As you may know, I love lemon desserts, so I made Lemon cookies!


Let me tell you guys, these cookies are delicious! Here is the recipe:

Lemon Crinkles

yields: 2-3 DOZEN prep time: 20 MIN cook time: 10 MIN total time: 30 MIN

½ cups Butter, Softened
1 cup Granulated Sugar
½ teaspoons Vanilla Extract
1 whole Egg
1 teaspoon Lemon Zest
1 Tablespoon Fresh Lemon Juice
¼ teaspoons Salt
¼ teaspoons Baking Powder
⅛ teaspoons Baking Soda
1-½ cup All-purpose Flour
½ cups Powdered Sugar

Preheat oven to 350 degrees. Grease light colored baking sheets with non stick cooking spray and set aside.

In a large bowl, cream butter and sugar together until light and fluffy. Whip in vanilla, egg, lemon zest and juice. Scrape sides and mix again. Stir in all dry ingredients slowly until just combined, excluding the powdered sugar. Scrape sides of bowl and mix again briefly. Pour powdered sugar onto a large plate. Roll a heaping teaspoon of dough into a ball and roll in powdered sugar. Place on baking sheet and repeat with remaining dough.

Bake for 9-11 minutes or until bottoms begin to barely brown and cookies look matte {not melty or shiny}. Remove from oven and cool cookies about 3 minutes before transferring to cooling rack.

*If using a non stick darker baking tray, reduce baking time by about 2 minutes.

So let me tell you about my trip, I had a great time and had lots of fun in the ocean. One thing that I thought you guys would be interested in was an ice cream place. It had over 100 flavors, including bacon, fresh spinach, fresh corn, and many more. I settled for mint chocolate chip to be on the safe side and it was pretty good!   1. Lemon is one of my favorite citrus, and possibly finger limes (just posted on my blog few days ago). Sounds like a lovely trip, which beach did you go to? I can’t wait to go to the beaches in Valencia soon (Spain).

  2. Yeahh! I am happy that you are back! these lmeon cookies look really tasty but I would add 1 tablespoon of limoncello to the dough for extra lemon flavour! 😉
